This Miso Butter Roasted Cabbage Wedges recipe delivers a savory, umami-packed twist on simple roasted cabbage. The combination of miso paste and butter creates a rich glaze that caramelizes beautifully in the oven, while crispy garlic-toasted panko breadcrumbs add a delightful crunch. Perfect as a unique side dish, this recipe is easy to prepare and highlights the natural sweetness and texture of cabbage.

  • Total Time: 40-45 minutes
  • Yield: 4 servings

Ingredients

For the Cabbage and Miso Butter Glaze

  • 3 tbsp butter (divided)
  • 1 tbsp miso paste
  • 1 sweetheart (hispi) cabbage, cut into 4 wedges (pointed cabbage in the US)

For the Breadcrumb Topping

  • ¼ cup Panko breadcrumbs
  • ¼ tsp garlic powder
  • 1 tbsp chopped parsley (optional)

Instructions

  1. Preheat the Oven and Prepare Cabbage: Preheat your oven to 200°C (400°F). Cut the sweetheart cabbage into four even wedges, keeping the base intact so they hold together during roasting.
  2. Make Miso Butter and Coat Cabbage: Soften 2 tablespoons of butter and mix it thoroughly with the miso paste until well combined. Brush this miso butter mixture evenly all over each cabbage wedge, including the base, ensuring full coverage for maximum flavor.
  3. Roast the Cabbage: Place the coated cabbage wedges on a baking sheet and roast them in the preheated oven for 30 to 35 minutes. Roast until the cabbage develops a charred, caramelized exterior while maintaining a slightly crispy texture inside.
  4. Prepare Garlic Breadcrumbs: While the cabbage roasts, melt the remaining tablespoon of butter in a pan on medium heat. Add the panko breadcrumbs and garlic powder, stirring continuously to toast the crumbs evenly and prevent burning. Once golden brown, immediately remove the pan from heat.
  5. Serve with Breadcrumbs and Parsley: After roasting, transfer the cabbage wedges to a serving plate. Sprinkle the toasted garlic breadcrumbs evenly over the cabbage. Optionally, garnish with chopped parsley to add freshness and color before serving.

Notes

  • You can substitute the sweetheart (hispi) cabbage with pointed cabbage if unavailable.
  • Ensure the butter for the miso mixture is softened for easy mixing.
  • Watch breadcrumbs carefully while toasting as they can burn quickly.
  • For a vegan version, replace butter with a plant-based alternative, though flavor and texture may slightly differ.
  • Serve immediately for best texture and flavor as the breadcrumbs can lose crunch over time.
