Instructions

- Fill Muffin Liners: Scoop the batter into the prepared muffin liners, filling each about two-thirds full to allow room for rising.
- Bake Muffins: Bake in the preheated oven for 15 to 20 minutes, or until a cake tester inserted in the center comes out clean. Remove from oven and transfer to a wire rack to cool. If using silicone liners, gently remove the muffins from the liners once cooled.
- Prepare Lemon Glaze: In a medium bowl, whisk together powdered sugar and fresh lemon juice along with the reserved lemon zest until smooth and pourable.
- Glaze Muffins: Drizzle the lemon glaze over each cooled muffin or dip the tops into the glaze, letting any excess drip off. Allow the glaze to set completely before serving or storing.
- Store Muffins: Once the glaze has set, store muffins in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
