Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the pot pie.
  2. Sauté Mushrooms Part 1: In a large 12-inch ovenproof skillet, heat 2 tablespoons of olive oil over medium-high heat. Add half of the mushrooms, season with salt and pepper, and cook undisturbed for about 3 minutes until browned. Stir and continue cooking for another 3 minutes until all sides are browned. Transfer mushrooms to a medium bowl.
  3. Sauté Mushrooms Part 2: Repeat the process with the remaining 2 tablespoons of olive oil and the rest of the mushrooms. Transfer to the same medium bowl with the first batch.
  4. Cook Vegetables: Reduce heat to medium and add the butter to the skillet. Once melted, add the chopped onion and carrots. Cook until they begin to soften, about 5 minutes.
  5. Add Aromatics and Flour: Stir in the minced garlic and cook for 30 seconds until fragrant. Add tomato paste and cook for 1 minute. Sprinkle in the flour and cook for an additional minute to form a roux.
