Instructions
- Process Nuts and Dates: Add walnuts, almonds, medjool dates, cacao powder, vanilla bean paste, and salt to a food processor. Blend until a sticky dough forms. If the dough is crumbly rather than sticky, add 1-2 tablespoons of water gradually and process again to help the mixture bind together properly.
- Incorporate Chocolate Chips: Add mini chocolate chips to the food processor and pulse a few times to evenly distribute them throughout the dough without fully blending them in.
- Form the Brownie Bites: Using a mini cookie scoop or tablespoon, scoop out the dough and roll it into bite-sized balls with your hands. Serve immediately or refrigerate for a firmer texture.

- If the dough is too dry, add water slowly to avoid over-moistening.
- Maple syrup is optional for added sweetness depending on your taste and the sweetness of the dates.
- You can store the brownie bites in an airtight container in the refrigerator for up to one week.
