Ingredients

Energy Bite Mixture

  • 1 cup raw cashews
  • 3/4 cup almond flour
  • 1/4 cup shredded coconut (unsweetened)
  • 1 Tbsp lime zest
  • 2-3 Tbsp lime juice
  • 3/4 tsp vanilla bean paste
  • 1 pinch sea salt

Coconut Lime Coating

  • 1/4 – 1/3 cup shredded coconut (unsweetened)
  • 1 Tbsp lime zest

Instructions

  1. Prepare the coconut lime coating: In a small bowl or plate, combine the shredded coconut and lime zest. Stir well to mix evenly, then set aside for later coating.
  2. Process the dates: Add the pitted Medjool dates to a food processor and blend until the dates break down into small bits or form a sticky ball. Scoop this out and set aside.
  3. Process the dry ingredients: In the now-empty food processor, add raw cashews, almond flour, and 1/4 cup shredded coconut. Blend for 20-30 seconds until a fine meal texture is achieved.
  4. Combine ingredients: Divide the date ball into four or more pieces and add back to the food processor along with 1 Tbsp lime zest, 2 Tbsp lime juice, vanilla bean paste, and a pinch of sea salt. Blend until a tacky dough forms. If too dry, add remaining lime juice (or water if preferred); if too sticky, add more shredded coconut as needed.
  5. Form and coat energy bites: Scoop about 1 tablespoon of dough, roll it into a ball, then roll the ball in the coconut lime coating to fully cover. Place on a baking sheet or plate. Repeat until all dough is used.
  6. Store and serve: Enjoy immediately or refrigerate covered for up to a week, or freeze for longer storage up to 1 month.
