Instructions

- Mix yogurt and baking soda: In a small bowl, stir the yogurt with a pinch of baking soda until the mixture becomes fluffy and bubbles start to form. This step helps to neutralize the baking soda and activate the leavening.
- Add egg, vanilla, and honey: Whisk the egg into the yogurt mixture, then add the vanilla bean paste and honey. Combine thoroughly for a smooth, slightly sweet batter.
- Incorporate the oats and rest the batter: Stir the ground oats into the wet ingredients. Let the mixture sit for a few minutes to allow the oats to soak and the batter to thicken. If too thick, thin it by adding 1-2 tablespoons of water or milk until spoonable.
- Preheat and prepare the pan: Heat a non-stick pan over low to medium heat. Coat the surface with coconut oil or butter to prevent sticking and add flavor.
- Cook the pancakes: Using a large spoon or ladle, pour small amounts of batter onto the pan, spacing pancakes well apart. Cook until bubbles begin to rise at the edges and the underside is golden, then flip carefully and cook the other side until equally golden and cooked through.
- Serve: Remove the pancakes from the pan and serve immediately with your favorite toppings such as fresh fruit, syrup, or nuts.
