- 1 tablespoon olive oil
- 8 oz. white button mushrooms, sliced
- 2 tablespoons butter
- ½ onion, diced
- 1 lb ground beef
- 2 teaspoons garlic powder
- 3 tablespoons all-purpose flour
- 1 teaspoon paprika
- ¼ cup dry sherry (or beef broth)
- 4 cups low-sodium beef broth
- 1½ teaspoons salt
- ½ teaspoon black pepper
- 4 cups dry egg noodles
- ½ cup sour cream
- 1–2 tablespoons freshly chopped parsley
Instructions
- Sauté the Mushrooms: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for about 5-6 minutes until tender. Remove the mushrooms from the skillet and set aside.
- Cook the Ground Beef: In the same skillet, melt 2 tablespoons butter over medium heat. Add the ground beef, diced onion, and garlic powder. Cook until the beef is browned and broken up, about 5-7 minutes. Drain any excess fat and return the skillet to the stove.
- Make the Sauce: Stir in 3 tablespoons all-purpose flour and 1 teaspoon paprika. Cook for about 1-2 minutes to thicken the mixture. Splash in ¼ cup dry sherry (or beef broth) and stir, scraping any browned bits from the bottom of the skillet. Let the sherry cook off.
- Add the Broth and Noodles: Gradually stir in 4 cups beef broth, 1½ teaspoons salt, and ½ teaspoon black pepper. Bring the mixture to a boil, then add the 4 cups dry egg noodles. Reduce the heat to a simmer, cover, and stir occasionally until the noodles are tender, about 8-10 minutes.
- Finish the Dish: Stir the cooked mushrooms back into the skillet. Add ½ cup sour cream and 1-2 tablespoons freshly chopped parsley. Stir to combine.
- Serve: Serve warm and enjoy your creamy, savory Ground Beef Stroganoff!
Notes
- This dish can be made with ground turkey or chicken as a lighter alternative.
- If you prefer a thicker sauce, you can let the stroganoff simmer uncovered for a few more minutes after adding the noodles.
