Delightfully fragrant and moist, these Orange and Cardamom Muffins combine the bright citrus flavor of orange with the warm, aromatic spice of cardamom. Perfect for a breakfast treat or afternoon snack, these muffins are easy to make and bake to a golden perfection with a sweet sparkling sugar topping for a delightful crunch.

  • Total Time: 32 minutes
  • Yield: 10 servings

Ingredients

Wet Ingredients

  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1/4 cup orange juice
  • Zest of 1 large orange, finely grated

Dry Ingredients

  • 1 tsp ground cardamom (use 1 1/2 teaspoons for a more pronounced cardamom flavor)
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Topping

  • 3 tbsp sparkling sugar (or regular sugar)

Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 350°F (175°C) and either butter a muffin tin or line it with muffin liners to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, whisk together the sugar, eggs, vegetable oil, milk, orange juice, and grated orange zest until the mixture is smooth and homogenous.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, ground cardamom, baking powder, baking soda, and salt ensuring that they are evenly mixed.
  4. Fold Together Wet and Dry Mixtures: Gradually add the dry ingredients to the wet ingredients and gently fold them together using a spatula until all the flour is incorporated, being careful not to overmix to keep the muffins tender.
  5. Fill Muffin Tins and Add Topping: Spoon the batter evenly into the prepared muffin tin cups, filling each about two-thirds full. Sprinkle the top of each muffin with sparkling sugar for a sweet, crunchy finish.
  6. Bake: Place the muffin tin in the oven and bake for 20 to 22 minutes until the muffins have risen and the edges begin to turn golden brown. Test for doneness by inserting a toothpick in the center of a muffin; it should come out clean without wet batter.
  7. Cool and Serve: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.

Notes

  • For a stronger cardamom flavor, increase the amount to 1 1/2 teaspoons as suggested.
  • You can substitute sparkling sugar with regular granulated sugar if sparkling sugar is not available.
  • Ensure not to overmix the batter to keep the muffins light and fluffy.
  • These muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for longer storage.
