Bread
- 1½ cups mashed ripe bananas (about 2–3 bananas)
- ⅓ cup vegetable oil
- 1 teaspoon baking soda

- 1 teaspoon vanilla bean paste

- ¼ cup brown sugar

Glaze
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla bean paste
- ½ cup Oreo cookies, chopped
Instructions
- Prep the pan: Preheat your oven to 350°F (175°C) and grease an 8×4-inch loaf pan thoroughly to prevent sticking.
- Mash the bananas: In a large bowl, add the ripe bananas and mash them until mostly smooth, ensuring a creamy base for the bread.
- Mix the base: Stir in vegetable oil, baking soda, and salt into the mashed bananas until well combined for the batter’s foundation.
- Add the wet ingredients: Whisk in vanilla bean paste, eggs, granulated sugar, and brown sugar until the mixture is smooth and uniform.
- Add the dry ingredients: Gradually stir in the all-purpose flour just until no streaks of flour remain. Avoid overmixing to keep the bread tender.
- Fold in the Oreos: Gently fold the chopped Oreo cookies into the batter to distribute them evenly without breaking them up too much.
- Bake: Pour the batter into the prepared loaf pan and bake for 50–60 minutes. Check for doneness by inserting a toothpick in the center; it should come out clean.
- Cool: Let the bread cool in the pan for 10 minutes for easier removal, then transfer to a wire rack to cool completely to room temperature.
- Make the glaze: Whisk together powdered sugar, milk, and vanilla bean paste until smooth and drizzle this glaze over the cooled loaf.
- Garnish and set: Sprinkle the remaining chopped Oreos on top of the glaze and allow it to set for 5–10 minutes before slicing and serving.
Notes
- Use ripe bananas with plenty of brown spots for the best flavor and natural sweetness.
- Be careful not to overmix the batter once the flour is added to avoid a dense bread.
- Let the bread cool completely before glazing to prevent the glaze from melting and sliding off.
- You can substitute vanilla bean paste with pure vanilla extract if necessary.
- Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
