Parmesan Beans is a simple and flavorful dish featuring creamy Cannellini beans sautéed with garlic, simmered to perfection, and enhanced with savory Parmesan cheese and freshly cracked pepper. This quick and hearty side pairs wonderfully with a variety of main dishes or can be enjoyed on its own for a comforting meal.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Ingredients

  • 2 cloves garlic
  • 2 Tbsp olive oil
  • 2 (15 oz) cans Cannellini beans
  • 1/2 cup vegetable broth (or chicken broth)
  • 1/3 cup grated Parmesan cheese
  • 1/4 tsp freshly cracked black pepper

Instructions

  1. Prepare the garlic: Mince the garlic cloves finely to release their flavor.
  2. Sauté the garlic: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about one minute until fragrant, taking care not to burn it.
  3. Add beans and broth: Drain the Cannellini beans but do not rinse them. Add the beans along with the vegetable or chicken broth to the skillet and stir to combine with the garlic and oil.
  4. Simmer the beans: Bring the mixture to a gentle simmer over medium heat. Allow it to cook for about 10 minutes, stirring occasionally, until the beans have thickened slightly and the spoon leaves a trail in the mixture.
  5. Incorporate Parmesan and seasoning: Stir in the grated Parmesan cheese and freshly cracked pepper. Taste and adjust seasoning as desired by adding more Parmesan, pepper, or salt.
  6. Serve hot: Once well combined and heated through, serve the Parmesan beans immediately for the best flavor and texture.

Notes

  • For a richer flavor, use chicken broth, or keep it vegetarian with vegetable broth.
  • Do not rinse the beans to preserve their creamy liquid which helps in thickening the sauce.
  • You can substitute Parmesan with Pecorino Romano for a sharper taste.
  • This dish pairs beautifully with grilled meats, roasted vegetables, or crusty bread.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
