Ingredients
Oat Base
- 2/3 cup peanut butter
- 3/4 cup old fashioned (rolled oats)
- 2 tbsp maple syrup
Regular Filling
- 1 tbsp peanut butter (per oat cup)
Protein Filling
- 1/2 cup peanut butter
- 3 tbsp protein powder
Chocolate Coating
- 1 cup chocolate chips (melted)
- 2 tsp oil (for melting chocolate)
- Flakey sea salt (optional, for garnish)
Instructions
- Prepare the oat base: In a bowl, mix together the peanut butter and maple syrup until smooth and well combined. Add in the old fashioned rolled oats and stir until the mixture is evenly incorporated.
- Form the base cups: Spoon about 2 tablespoons of the oat mixture into each silicone mold cavity, then press down firmly with a spoon or cookie scoop to create an even and compact base layer for each cup.
- Add the filling: Either place 1 tablespoon of peanut butter on top of each oat base or mix together 1/2 cup peanut butter with 3 tablespoons of protein powder until smooth and spread this protein filling evenly over each base cup. Return to the freezer for 20 minutes to firm up.
- Melt the chocolate coating: In the meantime, melt the chocolate chips with 2 teaspoons of oil in a microwave-safe bowl. Heat in 30-second increments, stirring thoroughly in between, until the chocolate is smooth and fully melted.
- Coat the oat cups: Remove the oat cups from the freezer and spoon the melted chocolate over the top of each one, covering the filling completely. Place the cups back in the freezer for an additional 20 minutes to harden the chocolate layer.
- Finish and serve: Remove the cups from the silicone molds carefully, sprinkle with flakey sea salt if desired, and enjoy your delicious peanut butter oat cups chilled.
