- 1 cup (150 g) all-purpose/plain flour
- 1 cup (80 g) old-fashioned rolled oats
- 1/2 tsp sea salt
- 1/2 tsp baking/bicarb soda
Wet Ingredients and Toppings
- 1/2 cup (125 g) butter – melted
- 1/3 cup (70 g) brown sugar
- 2 tsp vanilla bean paste
- 1 cup peanut butter (crunchy preferred)
- 2 tbsp maple syrup
Instructions
- Preheat Oven: Preheat your oven to 175°C (350°F) to prepare for baking.
- Prepare Baking Dish: Line a 20 x 20 cm (8 x 8 inch) baking dish with non-stick baking paper, leaving an overhang to make removal easier.
- Mix Dry Ingredients: In a medium-sized bowl, combine the all-purpose flour, rolled oats, sea salt, and baking soda thoroughly.
- Melt Butter and Mix: Melt the butter, then add it to another bowl with the brown sugar and vanilla bean paste. Stir to combine.
- Combine Mixtures: Add the wet mixture to the dry ingredients and mix well to form a dough.
- Form Base and Bake: Press about 3/4 of the mixture firmly into the prepared baking dish, reserving about 100 g (a firmly packed 1/2 cup) for the topping. Bake the base for 10 minutes.
- Prepare Peanut Butter Layer: In a small bowl, mix the peanut butter with the maple syrup. If the peanut butter is very thick, warm it in the microwave for a few seconds to soften.
- Assemble Bars: Remove the base from the oven and immediately spread the peanut butter and maple syrup mixture evenly over it. Crumble the reserved oat mixture over the top using your fingers.
- Bake Topping: Return the baking dish to the oven and bake for an additional 10 minutes or until the topping is cooked through and lightly golden brown.
- Cool Bars: Remove the bars from the oven and allow them to cool completely on the bench for 30 minutes.
- Chill and Slice: Place the bars in the fridge to chill for at least 30 minutes to firm up before removing from the tin and cutting into squares to prevent crumbling.
Notes
- Using all-purpose flour provides the best texture, but you can experiment with whole wheat for a nuttier flavor.
- Old-fashioned rolled oats give a chewier texture compared to quick oats.
- Crunchy peanut butter adds texture contrast, but smooth peanut butter can also be used if preferred.
- Maple syrup adds natural sweetness and a subtle flavor, but honey is also a suitable alternative.
- Ensure the bars are fully cooled and chilled before slicing to avoid crumbling.
