Ingredients
Chicken and Cooking
- 1 tablespoon olive oil
- 1 1/2 pounds boneless, skinless chicken breast, cut into bite-sized pieces
Peanut Sauce
- 1/4 cup creamy peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/4 teaspoon red pepper flakes
- 1/2 cup chicken broth
- 1 tablespoon lime juice
To Serve
- Steamed rice
- 1/4 cup chopped cilantro (for garnish)
- 1/4 cup chopped peanuts (for garnish)
Instructions
- Cook chicken: Heat olive oil in a large skillet over medium-high heat. Add the bite-sized chicken pieces and cook, stirring occasionally, until browned on all sides and cooked through, about 6-8 minutes.
- Whisk sauce: In a separate bowl, whisk together creamy peanut butter, soy sauce, honey, minced garlic, grated fresh ginger, red pepper flakes, chicken broth, and lime juice until the sauce is smooth and well combined.
- Simmer chicken in sauce: Pour the prepared peanut sauce over the cooked chicken in the skillet. Reduce the heat to medium and let the mixture simmer gently for 5 minutes, allowing the sauce to thicken and coat the chicken thoroughly.
- Serve: Spoon the peanut chicken over a bed of steamed rice. Garnish with chopped cilantro and chopped peanuts for added texture and fresh flavor.
Notes
- For extra heat, increase the red pepper flakes or add a splash of sriracha to the sauce.
- If the sauce is too thick, add a little more chicken broth to reach desired consistency.
- This dish pairs well with steamed or stir-fried vegetables like broccoli or snap peas for a complete meal.
- Use natural peanut butter with no added sugar for a healthier twist.
- To make it gluten-free, substitute tamari for soy sauce.
