Instructions

  1. Prepare the Chicken: In a medium bowl, combine the diced chicken breast and fish sauce. Toss in the cornstarch until the chicken pieces are evenly coated. Set aside to marinate slightly.
  2. Heat Aromatics: Heat half a tablespoon of oil in a large nonstick skillet over medium-high heat. Add minced garlic and ginger, stir-frying for about 30 seconds until fragrant but not browned.
  3. Cook Vegetables and Pineapple: Add the bell peppers, red chili pepper (if using), and pineapple chunks to the skillet. Stir-fry for 3 to 5 minutes until the peppers are tender-crisp. Pour in the Thai sweet chili sauce and cook while stirring until heated through. Remove this mixture from the skillet and set aside.
  4. Cook the Chicken: Add the remaining half tablespoon of oil to the skillet, then add the coated chicken pieces. Stir-fry for approximately 5 minutes, or until the chicken is fully cooked and no longer pink inside.
