Vegetables and Beans
- 1 red onion, thinly sliced
- 3 medium tomatoes, diced

Seasonings
- 2 teaspoon sumac

Dressing
- 3 tablespoons olive oil (45 ml)
- 1 tablespoon red vinegar (15 ml)
- 1 tablespoon fresh lemon juice (15 ml)
Instructions
- Prepare the onions: In a large bowl, combine the thinly sliced onions, sumac, and half of the sea salt (1/2 teaspoon). Use your hands to rub the sumac and salt into the onions for 30-60 seconds until they soften and release their flavors.
- Add tomatoes, beans, and parsley: Add the diced tomatoes, drained butter beans, and chopped fresh parsley to the bowl with the onions. Mix everything together gently to combine all the ingredients evenly.
- Mix the dressing: Pour in the lemon juice, red vinegar, olive oil, and the remaining 1/2 teaspoon of sea salt. Toss the salad again until all the ingredients are well coated with the dressing and flavors meld together.
- Season to taste: Taste the salad and adjust the seasoning by adding more salt and black pepper if needed. Optionally sprinkle aleppo chili flakes (pul biber) for a subtle heat and depth of flavor.
- Marinate (optional): For best flavor, cover the bowl and let the piyaz marinate at room temperature for about 20-30 minutes before serving. This allows the flavors to deepen.
- Store leftovers: Store any leftover piyaz in an airtight container in the refrigerator for up to 3 days. Serve chilled or at room temperature.
