Chive and Garlic Sauce

  • 125ml (1/2 cup) Greek yogurt
  • 1 tbsp chopped chives
  • 1 clove garlic, pressed or minced
  • 1 tsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Prepare the Salmon Cake Mixture: In a large mixing bowl, combine the mashed potatoes and salmon, ensuring no skin or bones remain. Crack the egg into the bowl, then add lemon zest and freshly squeezed lemon juice. Stir in the chopped parsley and 1 tablespoon of flour. Season with a pinch of salt and pepper. Mix thoroughly until well combined.
  2. Shape the Salmon Cakes: Use an ice cream scoop to portion the mixture into evenly sized balls. Place them on a flour-dusted plate or board, roll each ball in extra flour, and gently flatten them to form patties.
  3. Cook Using Pan Frying Method: Heat 2 tablespoons of olive oil in a frying pan over medium heat. Fry the salmon cakes for several minutes on each side, until they develop a golden and crunchy exterior. Remove and drain on paper towels.
  4. Alternatively, Use Air Fryer Method: Preheat your air fryer to 240°C (500°F). Lightly spray the salmon cakes with oil spray and arrange them in a single layer in the air fryer basket.
