A quick and healthy sautéed kale and Swiss chard recipe, perfect as a flavorful side dish packed with vitamins and a hint of spice from red pepper flakes.

  • Total Time: 15 minutes
  • Yield: 2 servings

Ingredients

Greens

  • 2 cups kale
  • 2 cups Swiss chard

Seasoning and Oil

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 pinch red pepper flakes
  • 1 pinch salt

Instructions

  1. Prep greens: Wash 2 cups of kale and 2 cups of Swiss chard thoroughly under running water or by submerging them in a water bowl. Dry them using a salad spinner or lay them flat to dry. Stack the leaves, roll them tightly, and cut them into thin strips by slicing off the ends. This sizing helps them cook evenly and quickly.
  2. Heat and season oil: Place a medium pan over medium-low heat and add 1 tablespoon of olive oil. Add the minced garlic and sauté until it starts to brown and emits a fragrant aroma, about 1 to 2 minutes. Add a pinch of red pepper flakes and cook for an additional 20-30 seconds, allowing the oil to absorb the pepper’s color and flavor without burning.
  3. Sauté greens: Add the sliced kale and Swiss chard to the pan. Stir constantly to coat the greens in the seasoned oil and cook them until they wilt and reduce in volume, approximately 2 to 3 minutes. Season with a pinch of salt, then remove from heat. Serve immediately for the best flavor and texture.

Notes

  • Be careful not to burn the garlic or red pepper flakes as they can turn bitter.
  • Use a salad spinner to ensure the greens are dry before cooking; excess water can cause splattering.
  • Adjust red pepper flakes to taste for milder or spicier heat.
  • Serve as a nutritious side dish alongside grilled meats, fish, or grains.
