Instructions
- Preheat the Oven: Preheat the oven to 400°F (200°C).
- Prepare the Sauce: In an 11×7 oven-safe dish, add the grape tomatoes, onion, green pepper, jalapeño (if using), garlic, tomato paste, salt, pepper, olive oil, and cumin. Stir everything together.
- Bake the Sauce: Place the dish in the preheated oven and bake for 30 minutes.
- Finish the Sauce: Once cooked, use a fork to burst the tomatoes and stir the mixture.
- Add the Shrimp: Add the uncooked shrimp to the dish and bake for an additional 8-10 minutes, or until the shrimp are fully cooked.
- Garnish and Serve: Sprinkle with fresh parsley and serve immediately.
Notes
- If you prefer a bit more heat, add extra jalapeño or a dash of red pepper flakes.
- This dish is delicious served over rice, couscous, or with a side of crusty bread to soak up the sauce.
