Ingredients

Pasta

  • 12 oz medium pasta shells (or any short pasta)
  • 1 cup reserved pasta water (you may not need it all)

Meat and Vegetables

  • 1 lb ground beef
  • ½ onion, diced
  • 2-3 cups baby spinach
  • 3-4 garlic cloves, minced (or about 1 tsp garlic powder)

Tomato Sauce

  • 2 (14.5 oz) cans diced tomatoes (juices included, do not drain)
  • 3 Tbsp tomato paste
  • 1 cup beef broth
  • 2 tsp Italian seasoning
  • ¼ – ½ tsp crushed red pepper
  • ½ tsp cracked black pepper
  • ½ tsp salt, adjust to taste

Other Ingredients

  • 2 Tbsp olive oil (divided)
  • ½ cup heavy cream
  • ¾ cup freshly grated Parmesan cheese, plus extra for topping
  • Chopped fresh basil and/or parsley, for garnish (optional)

Instructions

  1. Cook the Pasta: Cook the pasta shells according to package directions until al dente. Before draining, reserve about 1 cup of pasta water for later use. Drain the pasta and toss it with about 1 tablespoon of olive oil if you plan to set it aside for a while, preventing sticking.
  2. Prepare the Beef and Onions: While the pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. When the oil is hot and shimmering, add the diced onion and cook for 1-2 minutes until slightly softened. Add the ground beef, breaking it apart, and brown it thoroughly for about 7-9 minutes, stirring regularly. Drain any excess fat to avoid greasiness.
  3. Add Vegetables and Seasonings: Once the beef is cooked, stir in the baby spinach, diced tomatoes with their juices, beef broth, tomato paste, minced garlic, Italian seasoning, crushed red pepper, cracked black pepper, and salt. Cook together until the spinach has wilted and the ingredients are well combined, enhancing the flavors.
  4. Create the Creamy Sauce: Reduce the heat to medium-low. Add ½ cup of the reserved pasta water, heavy cream, and freshly grated Parmesan cheese to the skillet. Stir continuously to combine and allow the sauce to simmer for several minutes. This helps the sauce thicken and ensures the Parmesan melts completely, forming a rich, creamy texture. Add more reserved pasta water if a thinner sauce consistency is desired.
  5. Combine Pasta and Sauce: Add the cooked pasta to the skillet and gently toss everything together. Let it simmer for a couple of minutes so the sauce can thicken further and fully coat the pasta. Keep in mind that the sauce will thicken slightly as it cools.
  6. Serve and Garnish: Top the pasta with additional freshly grated Parmesan cheese and chopped fresh basil and/or parsley if desired. Serve immediately for a comforting and flavorful meal.
