- 1/4 cup soy sauce
- 1 Tbsp toasted sesame oil
- 1 Tbsp chili garlic sauce
- 1 Tbsp brown sugar
- 1 Tbsp water
- 1 tsp cornstarch
Main Ingredients
- 7 oz wide rice noodles
- 1 Tbsp cooking oil
- 8 oz sliced white mushrooms
- 2 cloves garlic, minced
- 1/2 lb frozen broccoli florets
- 2 green onions, sliced
Instructions
- Prepare the sauce: In a small bowl, whisk together soy sauce, toasted sesame oil, chili garlic sauce, brown sugar, water, and cornstarch until the cornstarch is fully dissolved. Set this mixture aside to be used later.
- Cook the noodles: Bring a pot of water to a boil and cook the wide rice noodles according to package instructions, approximately 7-8 minutes. Once done, drain them in a colander and set aside.
- Sauté mushrooms and garlic: Heat a large skillet over medium heat. Add the cooking oil, then the sliced mushrooms and minced garlic. Cook, stirring occasionally, until mushrooms release their moisture and start browning on the edges, enhancing their flavor.
- Add broccoli: Add the frozen broccoli florets directly to the skillet. Sauté for 2-3 minutes until the broccoli is no longer frozen but remains bright green and slightly crisp. Be careful not to overcook.
- Combine noodles and sauce: Add the cooked noodles and the prepared sauce to the skillet. Stir everything together and cook over medium heat for 1-2 minutes until the sauce thickens and coats the noodles evenly without pooling at the bottom.
- Garnish and serve: Remove from heat, sprinkle sliced green onions over the top, and serve immediately while hot.
Notes
- Toasted sesame oil adds a rich nutty flavor; if unavailable, substitute with regular sesame oil but expect a milder taste.
- Adjust chili garlic sauce to control spiciness.
- Do not overcook broccoli; it should remain bright and slightly crisp for the best texture.
- Wide rice noodles may stick together if not stirred during cooking—use plenty of water and a splash of oil if needed.
- Leftovers can be refrigerated for up to 2 days but best enjoyed fresh.
