Ingredients

Beef & Sauce

  • 1 ½ pounds boneless beef chuck roast, cut into ¼-inch strips

  • 1 tablespoon sesame oil
  • 3 teaspoons minced garlic (about 3 cloves)

  • 1 (12-ounce) bag frozen broccoli florets (about 3 cups)

Instructions

  1. Make the sauce: Whisk together 1 cup low-sodium beef broth, ½ cup low-sodium soy sauce, ⅓ cup dark brown sugar, 1 tablespoon sesame oil, and 3 teaspoons minced garlic in a medium bowl until well combined.
  2. Prepare the beef: Add 1 ½ pounds of boneless beef chuck roast strips to a 4-7 quart slow cooker. Pour the sauce over the beef, then toss to fully coat all the meat evenly.
  3. Cook the beef: Cover the slow cooker and cook on LOW for 2.5 to 3.5 hours, allowing the beef to become tender and flavorful.
  4. Thicken the sauce: About an hour before cooking is complete, remove ¼ cup of the sauce from the slow cooker and whisk it together with 2 tablespoons of cornstarch in a small bowl until smooth. Slowly stir this mixture back into the slow cooker to thicken the sauce.
  5. Add broccoli: For the last 30 minutes of cooking, add the frozen broccoli florets directly to the slow cooker. Stir to combine, cover, and continue cooking. For softer broccoli, thaw it partially before adding, or add it with 45 minutes to 1 hour remaining instead of 30 minutes.
  6. Serve: Once cooking is complete, garnish the Beef & Broccoli with green onions and sesame seeds if desired. Serve hot with white rice for a complete meal.
