Ingredients
For the Soutzoukakia (Meatballs):
- 340g ground beef (3/4 lb)
- 3/4 cup bread crumbs
- 1/3 cup milk
- 1 egg
- 1/2 medium onion (grated)
- 1 clove garlic (minced)
- 3 tablespoons parsley (chopped)
- 1 tablespoon fresh mint (chopped) or 1 teaspoon dried mint
- 1 teaspoon ground cumin
- 1/2 lemon (juiced)
- Salt and pepper to taste
For the Potato and Sauce:
- 1/4 cup olive oil
- 4 large potatoes (cut into wedges)
- 1 teaspoon oregano
- Salt and pepper to taste
- 2 cups tomato sauce
- 1 1/2 cups water
Instructions
- Preheat and Prepare Baking Dish: Preheat the oven to 350°F (175°C). Drizzle a large baking dish with olive oil to prevent sticking and add flavor.
- Season the Potatoes: Place the cut potato wedges in the baking dish, then sprinkle oregano, salt, and pepper over them. Toss thoroughly so the potatoes are evenly coated with the seasonings and olive oil.
- Bake Potatoes with Tomato Sauce: Pour the tomato sauce and water over the coated potatoes. Place the dish in the oven and bake for 30 minutes, allowing the potatoes to begin cooking and absorb the sauce flavors.
- Prepare the Soutzoukakia Mixture: While the potatoes bake, combine ground beef, bread crumbs, milk, egg, grated onion, minced garlic, parsley, mint, cumin, lemon juice, salt, and pepper in a large mixing bowl. Mix thoroughly until all ingredients are evenly incorporated.
- Shape the Meatballs: Take portions of the meatball mixture and mold them into oval-shaped meatballs using your hands. Set them aside ready for baking.
- Add Meatballs to Potatoes and Continue Baking: Remove the baking dish from the oven and place the shaped soutzoukakia on top of the par-cooked potatoes. Return the dish to the oven and bake for an additional 50 to 60 minutes until the potatoes are fork-tender and the meatballs are fully cooked.
- Flip Halfway Through: Halfway through baking, gently flip both the potatoes and the meatballs to coat them well with the tomato sauce, ensuring even cooking and rich flavor throughout.

- Use lean ground beef for best texture and less grease.
- Grating the onion helps to release more moisture and flavor into the meatballs.
- You can substitute dried mint with fresh mint depending on availability; fresh will yield a brighter flavor.
- Make sure to flip the potatoes and meatballs halfway through baking to avoid sticking and to evenly coat with sauce.
- If preferred, the recipe can be adapted to use ground lamb or a mix of beef and pork for a richer taste.
