- Mix Eggs and Spices: In a medium bowl, use a fork to whisk together the eggs, kosher salt, black pepper, garlic powder, onion powder, and dried thyme until well combined.
- Add Spaghetti Squash: Gently fold the cooked and thoroughly drained spaghetti squash strands into the egg and spice mixture, ensuring even distribution.
- Incorporate Flour and Cheese: Add the almond flour and grated Parmesan cheese. Mix thoroughly with a fork or rubber spatula until the mixture is well combined and holds together.
- Heat Oil: Preheat 1/2 cup of olive oil in a large 12-inch nonstick skillet over medium heat until shimmering but not smoking.
- Form and Fry Fritters: Using a 4-tablespoon scoop or spoon, spoon four mounds of the spaghetti squash batter onto the skillet. Lightly flatten each mound with a spatula to form patties.
- Cook Until Golden: Fry the fritters for 3 to 4 minutes on each side, carefully flipping them with two wide spatulas to prevent breaking, until both sides are golden brown and crispy.
- Drain and Continue Cooking: Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Remix the remaining batter and repeat the frying process until all fritters are cooked through.
