Ingredients
Main Ingredients
- 1 medium Pear
- 70 gr (1/3 cup) Brown Sugar
- 2 Eggs (medium to large size, at room temperature)
- 120 ml (1/2 cup) Canola Oil (or neutral flavoured oil)
- 120 gr (1/2 cup) Greek Yogurt
- 200 gr (1 1/3 cup) Self-Rising Flour
- 1/2 teaspoon Ground Cinnamon
- 1/2 teaspoon Ground Ginger
- 1/2 teaspoon Allspice
Topping
- 1 1/2 tablespoon Demerara Sugar (or Raw Sugar)
- 1/4 teaspoon Ground Cinnamon
Instructions
- Preheat and Prepare Pan: Preheat your oven to 180°C (350°F). Line your muffin pan with paper liners or grease it well with oil to ensure the muffins don’t stick.
- Prepare Pear: Peel, core, and cut the pear into small cubes. Set these aside for folding into the batter and optionally saving some for topping.
- Mix Wet Ingredients: In a large mixing bowl, whisk the eggs and brown sugar together for a couple of minutes until the mixture is lightly bubbly and well blended. Add the canola oil and Greek yogurt, and whisk until completely smooth.
- Combine Dry Ingredients: In a separate bowl, mix the self-rising flour with ground cinnamon, ground ginger, and allspice to evenly distribute the spices throughout the flour.
- Incorporate Dry into Wet: Add the spiced flour mixture to the wet ingredients and whisk gently until just combined, taking care not to overmix which could make the muffins tough.
- Fold in Pear: Gently fold the cubed pear chunks into the batter, reserving about a quarter of the cubes to optionally place on top of the muffins before baking.
- Fill Muffin Pan: Scoop the batter evenly into the prepared muffin pan. Optionally, place the reserved pear chunks on top of each muffin for a decorative and flavorful touch.
- Prepare Cinnamon Sugar Topping (Optional): In a small bowl, mix together the demerara sugar and ground cinnamon. Sprinkle this cinnamon sugar mixture generously over each muffin to create a sweet, crunchy topping.
- Bake: Place the muffin pan in the preheated oven and bake for about 20 minutes, or until the muffins are puffed up, golden brown, and a toothpick inserted in the center comes out clean.
- Cool: Remove the muffins from the oven and transfer them to a cooling rack. Let them cool completely before serving to enhance the texture and flavor.
Notes
- Use a firm but ripe pear for the best texture – Bartlett or Anjou pears work well.
- Self-rising flour contains baking powder and salt; if unavailable, combine all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
- Be gentle when folding in the pear chunks to avoid breaking them and creating a watery batter.
- Check muffins at 18 minutes as oven temperatures vary; don’t overbake to keep them moist.
