Spiced Roasted Carrots with Lemony Whipped Feta is a vibrant and flavorful appetizer or side dish featuring tender oven-roasted carrots coated in a warm blend of spices and honey, paired with a creamy, tangy whipped feta sauce brightened with lemon juice. This easy-to-make recipe perfectly balances sweet, spicy, and savory notes and is garnished with fresh parsley and optional pomegranate arils for a stunning presentation.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Carrots and Seasoning

  • 1 Pound Carrots
  • 3 Tablespoons Olive Oil
  • 2 Tablespoons Honey
  • 1/2 Teaspoon Aleppo Pepper
  • 1 Teaspoon Cumin
  • 1/2 Teaspoon Paprika
  • 1/2 Teaspoon Cinnamon
  • Sea Salt (to taste)
  • Ground Black Pepper (to taste)

Whipped Feta

  • 8 Ounces Feta Cheese (crumbled)
  • 1 Cup Greek Yogurt
  • 1 Lemon (juiced, about 3 tablespoons)
  • 3 Tablespoons Olive Oil
  • 2 Cloves Garlic

Optional Garnishes

  • 1 Tablespoon Fresh Parsley (chopped)
  • 1/2 Teaspoon Aleppo Pepper
  • Drizzle of Olive Oil
  • 1 Tablespoon Pomegranate Arils

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the carrots.
  2. Season Carrots: Wash and optionally cut the carrots, removing stems. Place them in a large bowl and add olive oil, honey, Aleppo pepper, cumin, paprika, cinnamon, sea salt, and black pepper. Toss thoroughly with your hands to coat the carrots evenly in the spice and honey mixture.
  3. Line Baking Sheet: Line a baking sheet with parchment paper to prevent sticking and to ease cleanup. Spread the seasoned carrots evenly on the sheet in a single layer.
  4. Roast Carrots: Roast in the preheated oven for 20 to 25 minutes until the carrots are fork tender. Halfway through cooking, remove the tray and toss the carrots to ensure even roasting.
  5. Prepare Whipped Feta: While the carrots roast, combine crumbled feta, Greek yogurt, lemon juice, olive oil, and garlic cloves in a food processor. Blend until the mixture is smooth and creamy. If a thinner consistency is desired, add a few tablespoons of water gradually and process again.
  6. Assemble Carrots and Feta: Spread the whipped feta evenly across a serving plate. Once the carrots finish roasting, transfer them on top of the whipped feta layer.
  7. Garnish Carrots: Garnish with chopped fresh parsley, a drizzle of olive oil, additional Aleppo pepper, and pomegranate arils if using. Serve immediately and enjoy the vibrant flavors.
  8. Storing Instructions: Prepare carrots and whipped feta as instructed and store separately in airtight containers in the refrigerator until ready to serve.
  9. Reheat Carrots: To reheat, line carrots on a parchment-lined baking sheet and bake at 250°F (120°C) for 10-15 minutes. Then plate with whipped feta and garnish as described.

Notes

  • You can adjust the spice levels by varying the amount of Aleppo pepper.
  • For a thinner whipped feta, add water incrementally until desired consistency.
  • Use fresh carrots for best flavor and texture; peeled or unpeeled both work well.
  • Pomegranate arils add a pop of color and sweetness but are optional.
  • This dish can be served warm or at room temperature.
  • Storing the carrots and whipped feta separately extends freshness.
