Ingredients
Noodles
- 16 ounces brown rice noodles
Sauce
- 3 large cloves garlic (or 4-5 small)
- 1 tablespoon fresh grated ginger
- 1 tablespoon oil (olive or any preferred oil)
- ⅔ cup creamy peanut butter (low/no salt)
- 4 tablespoons low sodium tamari or soy sauce
- ⅓ – 1 cup hot water (to adjust sauce consistency)
- 1 tablespoon rice vinegar
- 1 tablespoon toasted sesame oil
- 1-2 tablespoons sriracha (adjust to spice preference)
- 1-2 tablespoons maple syrup or honey
- ½ teaspoon red pepper flakes (optional for less spice)
- Optional: 2 teaspoons chili garlic sauce
Garnishes (optional)
- Crushed peanuts
- Scallions
- Additional red pepper flakes
Instructions
- Cook the noodles: Bring a large pot of water to a boil. Add the brown rice noodles and cook according to the package instructions until tender. Drain and set aside.
- Sauté garlic and ginger: Finely mince the garlic cloves. Heat 1 tablespoon of oil in a sauté pan over low heat. Add the minced garlic and cook for about 2 minutes until golden brown. Add the grated ginger and sauté for an additional 1 minute to release the flavors.
- Prepare the sauce: Remove the pan from heat. Add the peanut butter, tamari or soy sauce, rice vinegar, toasted sesame oil, sriracha, maple syrup or honey, red pepper flakes, and chili garlic sauce if using. Begin whisking the mixture while gradually adding ⅓ cup of hot water. Continue whisking and add more hot water as needed to achieve your desired sauce consistency.
- Adjust seasoning: Taste the sauce and adjust the flavor by adding more soy sauce for saltiness or more sriracha for spice, according to your preference.
- Toss noodles in sauce: Add about half of the sauce to the cooked noodles and gently mix to coat evenly. You may add more sauce depending on your preference; the recipe intentionally makes extra sauce to allow for this.
- Serve and garnish: Transfer the sauced noodles to bowls. Garnish with crushed peanuts, sliced scallions, and additional red pepper flakes if desired. Serve alongside your choice of vegetables or protein for a complete meal.
Notes
- You can adjust the spice level by changing the amount of sriracha and red pepper flakes.
- If you prefer a less salty dish, start with less tamari and add more gradually.
- The sauce consistency can be thinned or thickened by varying the amount of hot water added.
- Brown rice noodles can be substituted with other noodles such as rice vermicelli or soba noodles.
- Add cooked chicken, tofu, or vegetables like bell peppers, carrots, or broccoli to make the dish heartier.
- Use natural peanut butter with no added salt or sugar for a healthier option.
