Ingredients
Chicken and Sauce
- 1 pound ground chicken
- 1 tablespoon toasted sesame oil
- 1 tablespoon minced garlic
- 2 teaspoons fresh grated ginger
- 2 tablespoons honey
- 2 tablespoons peanut butter
- 2 tablespoons tomato paste
- 4 tablespoons chili paste (sambal oelek)
- 4 tablespoons low sodium soy sauce or tamari
- 2 tablespoons rice vinegar
- 1/4 teaspoon red pepper flakes
- 1 1/2 cups water
Noodles and Garnish
- 12 ounces rice noodles
- Cilantro (for garnish)
- Chopped peanuts (for garnish)
Instructions
- Cook noodles: Bring a large pot of water to a boil and cook the rice noodles according to package instructions until al dente. Drain and set aside as they will continue to cook in the sauce.
- Heat oil and brown chicken: In a large pot, heat the toasted sesame oil over medium heat. Add the ground chicken and cook, stirring occasionally, until it is browned and cooked through, about 6-8 minutes.
- Add ginger and garlic: Stir in the grated fresh ginger and minced garlic, cooking for 1-2 minutes until fragrant to build the base of the sauce.
- Add sauce ingredients: Mix in honey, peanut butter, tomato paste, chili paste (sambal oelek), low sodium soy sauce or tamari, and rice vinegar. Cook for 1-2 minutes to meld the flavors together.
- Simmer the sauce: Pour in 1 1/2 cups of water and bring to a low boil. Reduce heat and simmer gently for about 10 minutes to thicken the sauce slightly.
- Add cooked noodles and finish: Add the cooked rice noodles to the pot with the sauce. Simmer for a few more minutes so the noodles absorb the flavors and the sauce thickens further.
- Serve: Ladle the spicy peanut chicken noodles into bowls and garnish with fresh cilantro, chopped peanuts, and a sprinkle of red pepper flakes for extra heat. Enjoy warm.
Notes
- Cook noodles al dente as they will continue to cook in the sauce for perfect texture.
- Adjust chili paste quantity to control the level of spiciness.
- Use low sodium soy sauce or tamari to keep the sodium content moderate.
- If peanut allergies are a concern, substitute peanut butter with sunflower seed butter.
