  • Total Time: 35 minutes
  • Yield: 6 servings

Ingredients

Meatball Ingredients

  • 1 1/2 lbs. lean ground turkey
  • 5 ounces baby spinach
  • 3 cloves garlic
  • 1 large egg
  • 1/2 cup breadcrumbs (regular or gluten free)
  • 1/2 cup crumbled feta cheese
  • 2 teaspoons dried oregano
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Sauce

  • Homemade marinara sauce (or substitute with a 32 ounce jar of store-bought marinara sauce)

Garnish

  • Freshly chopped parsley (optional)

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to ensure it’s ready for baking the meatballs.
  2. Prepare marinara sauce: Pour your homemade or store-bought marinara sauce into a large oven-safe skillet or baking dish and set aside. This will be the base for the meatballs while baking.
  3. Cook and chop spinach: Heat olive oil in a skillet over medium heat. Add the baby spinach and cook until wilted, then add minced garlic and sauté for another 30 seconds. Remove from heat and coarsely chop the spinach and garlic mixture on a cutting board.
  4. Make the meatball mixture: In a medium bowl, combine the ground turkey, chopped spinach and garlic, egg, breadcrumbs, crumbled feta cheese, dried oregano, salt, and black pepper. Gently mix the ingredients with your hands until just combined to avoid tough meatballs.
  5. Form and add meatballs: Shape the turkey mixture into balls about 2 tablespoons in size. Place each meatball carefully into the skillet or baking dish containing the marinara sauce.
  6. Bake the meatballs: Place the skillet or baking dish in the preheated oven and bake for 20 to 25 minutes. Check at 15 minutes for doneness; meatballs are cooked when an internal thermometer reads 165°F (74°C).
  7. Serve: Remove meatballs from the oven. Garnish with freshly chopped parsley if desired, and serve hot with extra marinara sauce.

Notes

  • You can substitute the homemade marinara sauce with a good quality store-bought version for convenience.
  • Breadcrumbs can be regular or gluten-free depending on dietary preferences.
  • Be careful not to overmix the meat mixture as it can make the meatballs tough.
  • Monitor the internal temperature to avoid overcooking and drying out the turkey meatballs.
  • Serve with pasta, on a sub roll, or alongside a fresh salad for a complete meal.
