Lime Frosting
- 1/2 cup butter (at room temperature)
- 1 1/2 cup powdered sugar
- 1 tbsp heavy cream (or milk)
- 2 tbsp lime juice
- 1/2 tsp lime flavoring
- Food coloring (lime green or mix of yellow and green)
- 2 tbsp white chocolate (for drizzling, melted)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, ensuring it extends over the edges for easy removal later.
- Cream Butter and Sugar: In a mixing bowl, cream together the softened butter and brown sugar until the mixture is smooth and creamy.
- Add Wet Ingredients: Add the egg, vanilla bean paste, and coconut flavoring to the butter and sugar mixture. Mix thoroughly to combine all ingredients evenly.
- Incorporate Dry Ingredients: Gently fold in the flour, baking powder, salt, and shredded unsweetened coconut just until no flour streaks remain. Then fold in the white chocolate chips evenly throughout the batter.
- Bake the Bars: Spread the batter evenly in the prepared baking pan. Bake in the preheated oven for 15-16 minutes or until the edges are lightly golden and a toothpick inserted comes out clean.
- Cool Completely: Remove the pan from the oven and let the bars cool completely in the pan on a wire rack before frosting.
- Prepare Lime Frosting: In a large bowl, whip together the softened butter, powdered sugar, heavy cream (or milk), lime juice, and lime flavoring until the mixture is light, smooth, and fluffy.
- Add Color to Frosting: Mix in a few drops of lime green food coloring or combine yellow and green food coloring until you achieve the signature Starbucks lime frosting color. Stir well to distribute evenly.
- Frost the Bars: Spread the lime frosting evenly over the cooled bars. Drizzle melted white chocolate over the frosting using a piping bag, ziplock bag, or spoon for a decorative finish.
- Final Touch and Serve: Sprinkle additional shredded coconut on top for garnish. Slice into bars and enjoy immediately or chill in the refrigerator until the frosting is set for a cool treat. Serve with milk or your favorite Starbucks coffee for the full experience.
