Ingredients
Overnight Oats Base
- 1 cup rolled oats
- 1 Tablespoon chia seeds
- 2 Tablespoons almond butter
- 1 cup milk (or almond milk)
- 2-3 Tablespoons maple syrup (or to taste)
- 1/2 cup vanilla Greek yogurt
Toppings
- 6-7 medium strawberries (fresh or frozen and thawed)
- 1 Tablespoon white chocolate chips
- 1/2 teaspoon coconut oil
- 1/4 cup vanilla Greek yogurt
Instructions
- Combine Ingredients: In two jars or containers, mix the rolled oats, chia seeds, almond butter, milk, maple syrup, and 1/2 cup of vanilla Greek yogurt thoroughly to create the overnight oats base.
- Add Strawberries: Slice the strawberries and evenly distribute them into the jars, mixing gently to combine with the oats.
- Melt White Chocolate Mixture: In a microwave-safe bowl, melt the white chocolate chips and coconut oil together by microwaving for 30-45 seconds, stirring every 15 seconds to ensure even melting.
- Whisk Yogurt Into Chocolate: Slowly whisk the 1/4 cup vanilla Greek yogurt into the melted white chocolate and coconut oil mixture until the cream topping is smooth and well combined.
- Top Overnight Oats: Spoon the creamy white chocolate yogurt topping over each jar of overnight oats, smoothing it out with the back of a spoon for an even layer.
- Refrigerate: Seal the jars with lids and refrigerate them overnight to allow the oats to soak and flavors to meld.
- Serve: Enjoy your refreshing and creamy strawberries and cream overnight oats cold, straight from the fridge in the morning.
Notes
- For a vegan version, substitute Greek yogurt with plant-based yogurt such as almond or coconut yogurt and use maple syrup instead of honey if needed.
- Adjust the sweetness by varying the amount of maple syrup to your taste preference.
- Use fresh strawberries if available, but frozen and thawed strawberries work well too.
- Prepare multiple jars at once for a quick grab-and-go breakfast throughout the week.
- The white chocolate cream topping adds a rich, indulgent touch but can be omitted for a lighter option.
