Ingredients
Cookie Dough
- 1 cup salted butter
- 1½ cups granulated sugar
- 1 large egg
- 1 egg yolk
- 2 teaspoons vanilla bean paste
- 2¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
Cream Cheese Frosting
- 4 ounces cream cheese, room temperature
- 2 tablespoons salted butter
- 1 teaspoon vanilla bean paste
- Pinch of salt
- 1¾ cup powdered sugar
Topping
- Fresh fruit, diced (such as strawberries, kiwi, blueberries, or any preferred fruit)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper to prevent sticking and for easy cleanup.
- Prepare Wet Ingredients: In a stand mixer fitted with a paddle attachment, beat the salted butter and granulated sugar on medium-high speed for about 3 minutes until the mixture is light and fluffy. Add the egg, egg yolk, and vanilla bean paste, then mix on low speed until smooth, approximately 30 seconds.
- Incorporate Dry Ingredients: Gradually add the baking soda, salt, and all-purpose flour into the wet mixture. Mix slowly until just combined to avoid overworking the dough.
- Form Cookie Dough Balls: Using a ¼ cup cookie scoop or your hands, form large dough balls. Place 6-7 dough balls evenly spaced on each lined baking sheet to allow room for spreading.
- Bake Cookies: Bake in the preheated oven for 11 to 14 minutes, or until the edges turn a light golden brown and the tops show slight crackling. Be careful not to overbake to maintain the chewy texture.
- Make Cream Cheese Frosting: In a mixing bowl, beat together the softened cream cheese and salted butter until smooth and creamy. Add the vanilla bean paste, a pinch of salt, and powdered sugar, then continue mixing until the frosting is smooth and well combined.
- Frost the Cookies: Allow the cookies to cool completely before spreading a generous layer of cream cheese frosting on top to prevent melting.
- Add Fresh Fruit: Dice fresh fruits into small pieces and decorate the frosted cookies generously with the fruit pieces for a colorful and flavorful finish.
Notes
- Use room temperature ingredients to ensure a smooth and easy mixing process.
- For consistent cookie size and even baking, use a cookie scoop to portion the dough.
- Be careful not to overbake the cookies; they should look slightly underbaked in the center as they will continue to cook slightly after removal from the oven.
- Feel free to customize the fruit topping with seasonal berries or your favorites.
- Store frosted cookies in an airtight container in the refrigerator due to the cream cheese frosting.
- Allow cookies to cool completely before frosting to avoid melting the frosting.
