- 1 cup Greek yogurt*
- 1 cup 2% cottage cheese*
- 1 cup strawberries (fresh or frozen)
- 1 ripe banana (frozen banana works great too!)
- 1 tsp vanilla bean paste
- Pinch of salt
Instructions
- Combine Ingredients: Add the Greek yogurt, 2% cottage cheese, strawberries, ripe banana, vanilla bean paste, and a pinch of salt into a blender or food processor.
- Blend Until Smooth: Blend all the ingredients thoroughly until you achieve a creamy, smooth consistency with no lumps remaining.
- Pour Into Moulds: Pour the blended mixture evenly into ice cream bar moulds, filling each to the top.
- Freeze: Place the filled moulds on a flat surface in the freezer and let them freeze for at least 4 hours or overnight to ensure they are fully set.
- Serve: Once frozen solid, carefully pop the ice cream bars out of the moulds and enjoy your refreshing, sugar-free strawberry frozen treats!
Notes
- You can substitute fresh strawberries with frozen ones if fresh are out of season.
- For creamier bars, use frozen banana to help with texture and sweetness.
- If you don’t have vanilla bean paste, vanilla extract can be used as a substitute.
- Make sure to freeze the bars on a flat surface to ensure even freezing and shape retention.
