Salmon
- 2 skinless salmon filets, about 1 inch thick each

Spread Ingredients
- ¼ cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- ½ cup diced red bell peppers
- 4 green onions, thinly sliced
- ⅓ cup crumbled feta cheese
- ¼ cup chopped fresh dill
- 2 tablespoons chopped fresh chives
Instructions
- Prepare the Salmon: If you have leftover cooked salmon, you can skip to the next step. Otherwise, preheat your grill to the highest setting to get it ready for cooking the salmon.
- Season and Grill the Salmon: Season the salmon filets all over with kosher salt, pepper, and a pinch of garlic powder. Place the salmon on the grill and close the lid. Grill for 3 to 4 minutes on one side, then gently flip the filets and grill for an additional 2 to 3 minutes until fully cooked and opaque.
- Cool and Flake the Salmon: Remove the salmon from the grill and let it cool to room temperature. Once cooled, use a fork to flake the salmon into small pieces, making it easy to mix into the spread.
- Mix the Spread: In a medium bowl, combine the plain Greek yogurt, mayonnaise, and Dijon mustard. Stir well until smooth. Add the flaked salmon, diced red bell peppers, sliced green onions, crumbled feta cheese, chopped dill, and chopped chives. Mix gently until all ingredients are evenly incorporated.
- Season and Finalize: Taste your salmon spread and season with additional salt and pepper if needed, depending on how seasoned the salmon was initially.
- Serve and Store: Serve the summer salmon spread chilled with crackers, croissants, lettuce cups, sandwiches, or pita bread. This spread can be stored in the refrigerator for a few days and maintains its fresh flavor.
