Ingredients
Almonds
- 2 cups raw almonds
Coating Mixture
- 3 Tbsp. cocoa powder
- 1 Tbsp. honey (or agave syrup if vegan)
- 1 tsp. fine sea salt
Instructions
- Preheat Oven: Preheat your oven to 350° F (177° C) to prepare for roasting the almonds.
- Initial Roast: Spread the raw almonds evenly on a baking tray and place them in the oven to roast for 6 minutes.
- Shake and Continue Roasting: Remove the tray from the oven and shake it gently to ensure the almonds roast evenly. Return the tray to the oven and roast the almonds for another 5 to 6 minutes.
- Cool Slightly: Remove the almonds from the oven and allow them to cool on the baking tray for 2-3 minutes to slightly reduce heat before mixing.
- Toss with Honey: Transfer the warm almonds into a medium bowl and add the honey (or agave syrup). Toss well to coat all almonds evenly.
- Add Cocoa and Salt: Sprinkle the cocoa powder and fine sea salt over the coated almonds, then toss again to ensure an even cocoa coating.
- Spread to Cool: Spread the coated almonds back onto the baking sheet in a single layer to cool completely. This prevents clumping and ensures an even distribution of cocoa powder.
- Store: Once fully cooled, transfer the almonds to an airtight container or jar. They can be stored for up to one week, retaining their crispiness and flavor.
Notes
- For a vegan version, substitute honey with agave syrup.
- Ensure almonds are spread evenly both before and after roasting to achieve uniform roasting and coating.
- Storing almonds in an airtight container helps maintain their crunch and flavor up to one week.
- You can adjust the amount of cocoa powder or honey to suit your taste preferences.
- Using fine sea salt helps achieve a balanced flavor that enhances the cocoa and sweetness.
