Instructions
- Prepare the Marinade: In your slow cooker, combine the soy sauce, tomato paste, additional soy sauce, garlic powder, brown sugar, and black pepper. Stir these ingredients together to create a flavorful marinade base.
- Add Main Ingredients: Add cubed chicken breasts, diced red bell pepper, and the pineapple chunks along with their juice into the slow cooker over the marinade.
- Mix Ingredients: Gently stir everything in the slow cooker to ensure that the chicken and bell peppers are evenly coated with the marinade and pineapple juices for consistent flavor throughout.
- Slow Cook: Cover the slow cooker with its lid and set it on low heat. Let the chicken cook for 4 to 6 hours until tender. Alternatively, you can cook on high heat for 2 to 3 hours if short on time.
- Adjust Seasoning: About 30 minutes before serving, taste the sauce and adjust seasoning if needed. You may add extra soy sauce or brown sugar to suit your taste preferences.
