Instructions
- Melt Butter and Mix Wet Ingredients: Melt the unsalted butter in 30-second increments using the microwave or on the stovetop. Transfer the melted butter to a medium mixing bowl and add brown sugar, eggs, and vanilla bean paste. Whisk together until the mixture forms a smooth paste. Then, stir in the old fashioned oats until incorporated.
- Add Dry Ingredients: Add the all-purpose flour, cinnamon, baking soda, and kosher salt to the wet mixture. Gently fold the ingredients together with a spatula just until the dough comes together uniformly. The dough will be thick but cohesive.
- Preheat Oven and Portion Dough: Preheat your oven to 350°F (175°C). Using a 1 1/5 tablespoon scoop, ice cream scoop, or tablespoon, portion the cookie dough onto a cookie sheet lined with parchment paper. Lightly press down each cookie to flatten slightly. You may need to use two cookie sheets or bake in batches.
- Freeze Dough: Place the cookie sheets with the shaped dough in the freezer for 20 minutes. This helps the cookies maintain their shape during baking and creates a chewy texture.
- Bake Cookies: Remove the cookie dough from the freezer and bake in the preheated oven for 16-17 minutes, or until the edges are crisp and golden brown. Let the cookies cool on the baking sheet briefly before transferring to a wire rack to cool completely.
