Instructions
- Prepare ingredients: Finely dice the shallot, mince the garlic, and chop the fresh basil. Using a garlic press for the garlic will help release more flavor.
- Cook tomatoes: Heat olive oil in a pan over medium heat. Add the cherry tomatoes, truffle salt, and black pepper. Stir and cook the tomatoes until they burst open and release their juices, about 5 to 8 minutes. If needed, press the tomatoes gently with a spatula to help release the juice.
- Sauté aromatics: Add the diced shallots and minced garlic to the pan with the tomatoes. Stir well and cook for about 3 minutes until the shallots soften and the garlic becomes fragrant.
- Add butter beans: Pour the entire can of butter beans, including the liquid, into the pan. Stir to combine and bring to a simmer. Cook for an additional 5 minutes to reduce some of the liquid and let the beans heat through.
- Add creaminess: Stir in the vegan cream cheese until fully incorporated into the beans and tomato mixture, adding a creamy texture and richness.
- Finish with basil and seasoning: Remove the pan from heat and fold in the chopped fresh basil. Adjust seasoning by adding more salt and black pepper as desired.
- Serve: Serve the tomato basil butter beans warm with a big slice of toasted bread. Enjoy this comforting and flavorful meal!

- Using the liquid from the butter beans adds a creamy consistency—do not drain the beans.
