Meatloaf
- 3/4 cup grated zucchini (squeezed dry after)
- 1 lb ground turkey (93% lean)
- 2 tablespoons dried onion flakes
- 1/3 cup quick oats (or seasoned breadcrumbs)
- 1 large egg
- 1 teaspoon marjoram
- 1 teaspoon kosher salt
- 1/4 cup ketchup
Sauce
- 6 tablespoons ketchup (divided)
- 1 1/2 teaspoons Worcestershire sauce
Instructions
- Preheat Oven: Preheat your oven to 350°F to prepare for baking the meatloaf.
- Make Sauce: In a small bowl, mix 2 tablespoons of ketchup with 1 1/2 teaspoons Worcestershire sauce until well combined.
- Prepare Meatloaf Mixture: In a medium bowl, combine the ground turkey, grated zucchini (squeezed dry), dried onion flakes, oats or breadcrumbs, egg, 1/4 cup ketchup, kosher salt, and marjoram. Mix thoroughly to combine all ingredients evenly.
- Shape and Top: Shape the mixture into a loaf and place it on a baking sheet. Spoon the prepared ketchup and Worcestershire sauce mixture evenly over the top of the meatloaf.
- Bake: Bake uncovered in the preheated oven for 55-60 minutes, or until the meatloaf is cooked through and has reached an internal temperature of 165°F. Remove from the oven and let it rest for 5 minutes before slicing and serving.
Notes
- Make sure to squeeze excess moisture from the grated zucchini to prevent a soggy meatloaf.
- Using quick oats instead of breadcrumbs adds fiber and keeps the dish gluten-free if oats are certified gluten-free.
- Letting the meatloaf rest after baking helps retain juices and makes slicing easier.
- You can substitute marjoram with dried oregano or thyme if unavailable.
- For extra flavor, consider adding garlic powder or fresh herbs to the meat mixture.
