Instructions
- Prepare Cashews: Soak the cashews in hot water for about an hour or boil them for 10-15 minutes to soften. Once softened, discard the soaking or boiling water.
- Cook Potato: Boil the peeled and chopped potato in salted water until tender. Drain and measure out about 80 grams of cooked potato, which will mash to roughly 1/3 cup. Alternatively, you can boil cashews and potato together for convenience.
- Blend Ingredients: Add the soaked cashews, cooked potato, dairy-free milk, tapioca starch, nutritional yeast, white vinegar, sea salt, onion powder, and optional agar powder into a blender. Blend until the mixture is completely smooth.
- Cook Mixture: Pour the blended mixture into a saucepan and bring it to a boil over medium heat. Once boiling, reduce the heat and let it simmer for a few minutes, stirring frequently, until it thickens and develops a stretchy consistency.
- Use or Store: Use the vegan mozzarella immediately on your favorite dishes like pizza or toast for the best texture. You can also transfer it to a covered bowl and refrigerate; note that the texture will become creamier and less stretchy after chilling.

- For best results, use unsweetened, neutral-flavored dairy-free milk such as almond, oat, or soy milk.
- Agar powder is optional but helps firm up the cheese if you want a sliceable texture.
