Optional Add-ins and Toppings
- 1/3 cup chopped pecans (35g)

Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×13-inch square baking dish lightly to prevent sticking. Set aside.
- Combine Wet Ingredients: In a large mixing bowl, whisk together the dairy-free milk, pumpkin puree, maple syrup, and vanilla extract until smooth and well combined, ensuring there are no lumps.
- Add Dry Ingredients: To the same bowl, add oat flour, ground flaxseed, baking powder, salt, cinnamon, ground ginger, allspice, and cloves. Whisk all together until thoroughly combined. If using, fold in the chopped pecans.
- Transfer to Baking Dish: Pour the oat mixture into the prepared baking dish. Use a spatula to gently spread and smooth the mixture evenly across the pan.
- Bake: Place the dish in the preheated oven and bake for 40 to 50 minutes. Bake until the edges turn slightly brown and begin pulling away from the sides of the pan.
- Cool and Serve: Remove from oven and allow to cool completely before slicing. Serve warm or chilled with optional toppings like vegan whipped cream, yogurt, maple syrup, or fresh fruit. Store any leftovers covered in the refrigerator for up to 5-7 days.
