Instructions

  1. Prepare Seasoning Mix: In a small bowl, whisk together reduced-sodium soy sauce, water, nutritional yeast, smoked paprika, dried oregano, garlic powder, and chili powder. Set this mixture aside to be added later.
  2. Heat Pan: Place a large non-stick pan, skillet, or wok over high heat and add oil, allowing it to heat up and prepare for cooking the tofu.
  3. Cook Tofu Sausage: Crumble the drained and pressed firm tofu using your hands or a fork and add it to the hot pan. Cook for 10 to 15 minutes, stirring occasionally, until some pieces begin to turn golden brown, developing texture and flavor similar to sausage.
  4. Add Seasoning Mix: Pour the prepared seasoning and sauce mixture over the tofu in the pan. Continue cooking and stirring the tofu with the seasoning for another 10 minutes, allowing the flavors to meld.
  5. Make the Gravy Base: Reduce the heat to medium, then sprinkle the all-purpose flour over the tofu sausage mixture. Stir constantly and cook for about 5 minutes to lightly toast the flour and remove any raw taste.
  6. Incorporate Liquids: Slowly whisk in the cup of water and the soy milk while stirring continuously. Cook for 5 to 7 minutes, stirring often until the gravy thickens to your desired consistency.
