Instructions
- Make Spread: In a medium sized mixing bowl, combine the plain spreadable cream cheese with dried chives, dried dill, dried parsley flakes, coarse ground black pepper, onion powder, and garlic powder. Mix thoroughly until all ingredients are well incorporated to create a flavorful herb cream cheese spread.
- Spread Cheese: Lay one large flour tortilla flat on a clean surface. Evenly spread one fourth of the cream cheese mixture all the way to the edges of the tortilla. Repeat this step for the remaining three tortillas, ensuring each has an equal layer of the cheese spread.
- Arrange Vegetables: On one end of the tortilla, place one long thin strip of cucumber. Then evenly sprinkle one fourth of each of the finely diced or grated vegetables: red bell pepper, carrot, and chopped broccoli over the cream cheese layer. Repeat for each tortilla so every roll up has the same amount of vegetables.
- Roll: Carefully and tightly roll up each tortilla with the vegetable and cream cheese filling on the inside. Wrap each rolled tortilla tightly with plastic wrap individually to hold shape and freshness.
- Chill: Place the wrapped roll ups in the refrigerator and chill for at least 1 hour to firm up and let flavors meld. Before serving, remove plastic wrap and slice each roll into pinwheels about half an inch thick, yielding about 8 slices per tortilla depending on size. Serve chilled as a colorful appetizer or light snack.
