Za’atar Chicken is a flavorful Middle Eastern roast featuring chicken legs marinated in aromatic za’atar seasoning, lemon juice, garlic, and tomato paste, then oven-roasted to juicy, golden perfection. This easy-to-make dish brings vibrant herbs and citrus zest to your dinner table, perfect for a healthy, delicious meal.

  • Total Time: 2 hours 50 minutes (including marinating time)
  • Yield: 5 servings

Ingredients

Chicken and Marinade

  • 5 Chicken legs (chicken quarters) (about 2.4 lb / 1 kg)
  • 1½ Tablespoons Za’atar seasoning
  • Juice of 1 Lemon
  • Zest of 1 Lemon
  • 1 Tablespoon Garlic paste
  • 1 Tablespoon Tomato paste
  • ¼ cup Olive oil
  • Salt and black pepper to taste

Additional

  • 1 medium Onion, sliced into rounds

Instructions

  1. Prepare the marinade: In a large bowl, combine za’atar seasoning, lemon juice and zest, garlic paste, tomato paste, olive oil, salt, and black pepper. Mix thoroughly to create a smooth marinade.
  2. Prep the chicken: Remove any unwanted fat and excess skin from the chicken legs. Using a sharp knife, make three incisions on each leg to allow the marinade to better penetrate the meat and ensure even cooking.
  3. Marinate the chicken: Add the chicken legs to the bowl with the marinade, coating each piece well and rubbing marinade into the incisions. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to maximize flavor infusion.
  4. Preheat the oven: Heat your oven to 400°F (200°C) to achieve the perfect roasting temperature.
  5. Prepare the baking tray: Spread the sliced onions and the squeezed lemon shaft evenly across the rimmed baking tray. Arrange the marinated chicken legs on top, allowing the onions and lemon to impart additional flavor as the chicken roasts.
  6. Roast the chicken: Place the baking tray in the preheated oven and roast for 35-45 minutes. Halfway through cooking, baste the chicken with pan juices to keep it moist. There is no need to flip the chicken. The chicken is done when golden brown and the internal temperature reaches 165°F (74°C).
  7. Rest and serve: Remove the chicken from the oven and let it rest for about 5 minutes before serving. This helps the juices redistribute, ensuring tender and juicy meat. Serve with your choice of sides and enjoy!

Notes

  • For best results, marinate the chicken overnight to deepen the flavors.
  • Use a meat thermometer to accurately check doneness and avoid overcooking.
  • Za’atar seasoning blend can vary; choose your favorite brand or make your own for customized flavor.
  • Serve with rice, roasted vegetables, or fresh salads for a complete meal.
  • If you prefer crispy skin, broil the chicken for 2-3 minutes at the end, watching carefully to prevent burning.
